Ingredients brioche dough (for 4-6 people): p>

  • 380 g flour
  • 3 tbsp sugar
  • 1 pinch of salt
  • ½ cube of yeast
  • 100 ml lukewarm milk
  • 150 g butter
  • 3 eggs
  • 1 tbsp milk
  • some butter for the mold
  • some flour for processing the dough


Ingredients for tomato salad:

  • 500 g colorful tomatoes
  • 250g burrata
  • Truffles
  • Salt, pepper, sugar
  • Olive oil & balsamic


Preparation of brioche dough:

  1. Mix flour, sugar and salt in a bowl. Crumble yeast over it. Add milk, 50 g soft butter and 1 egg. Using the dough hook of the hand mixer, process into a smooth dough for 5 minutes.
  2. Cut the remaining butter into small cubes. Add half of it to the dough and knead it in with the dough hook of the hand mixer. When no more butter is visible, add the remaining butter cubes and knead again until the dough is smooth and supple. Cover and let rest in the refrigerator for 2 hours.
  3. Grease the loaf pan and pour the dough into it. Cover and let rise for 30 minutes.
  4. Preheat oven to 180 degrees (fan oven: 160 degrees). Whisk the egg with milk and spread it over the brioche bread. Bake for about 18 minutes. Allow to cool slightly and carefully remove from the mold.

Preparation of tomato salad:

  1. Dice colorful tomatoes, season with salt, pepper, sugar and good olive oil, add fresh lemon juice or white balsamic vinegar for the acidity, can be refined with fresh basil and/or roasted pine nuts if desired.


For serving:

  1. Cut the brioche into slices and toast it on the BOWL with a little olive oil. Then top with tomato salad burrata and truffles on the FIRE KITCHEN worktop.
