The Santoku knife from Napoleon is an excellent all-purpose knife and is ideal for chopping, slicing, mincing and dicing. The 7-inch blade with a Granton grind - with indentations or troughs that prevent food from getting stuck - and a bevel on both sides is ideal for precise cutting work. The knife has a wide cutting surface and a flared back that curves downwards to the tip. This makes it particularly suitable for preparation work and for moving food from the cutting board to the pot. A Santoku knife is smaller than a professional kitchen knife and is therefore also suitable for people with smaller hands.
