Burnt ends of pork belly

You know what burnt ends are. I still have to make them (they're on the list, I promise!). But I had a huge load of pork belly waiting to be transformed into something absolutely delicious. These pork belly burnt ends are simply amazing. My mouth is watering just writing this, really! Crispy, tender, smoked, intensely flavored, juicy – these meat bites simply combine everything that is good.
INGREDIENTS
- 2 kg (or more) pork belly, cut into 2 cm thick cubes
- 1/4 cup of your favorite BBQ marinade
- Grate that fits into the grill/smoker
- 1 bag of apple or maple chips (or mixed)

- 1 cup of your favorite BBQ sauce
- 2 tbsp butter
- 2 tbsp honey
- 2 tbsp brown sugar
PREPARATION
- Dice the pork belly into pieces of approx. 2.5 cm. Marinate the cubes with your favorite mixture. I used a pork mix from the Wiesel Grill BBQ world champion team from Germany, but of course you can also use one of our homemade marinades or your favorite mix.
- Light a full load of charcoal using a chimney starter. When the load is ready, spread a layer of charcoal on one side of the smoker's charcoal pan and preheat the smoker to 250°F. If using a kettle grill, make sure there is some distance between the heat source and the pork belly.
- Place the pork belly on a rack so that the meat cubes do not fall through the grill grate. Arrange the meat cubes close to each other in a single layer on the grid. Add the smoking chips to the lit coals and smoke for 2 hours or until the pork belly has developed a nice crust and a dark red color. Add smoking chips regularly. However, the coal should be enough.
- When the pork belly is finished smoking, place the meat cubes in an aluminum foil tray or on a baking sheet. Add the BBQ sauce, butter, honey and brown sugar. Cover with aluminum foil and place on the smoker for another 1 to 1 1/2 hours, until the pork belly reaches an internal temperature of 200°F.
- Remove the foil and cook for another 10 to 15 minutes until the sauce thickens and has a sweet, creamy consistency.
- The burnt ends of pork belly can be served as a side dish to a large, crisp salad or in thick, soft flatbread as an appetizer at parties.
By placing a Napoleon stainless steel smoking pipe on a single flame, you can also prepare this delicious BBQ recipe with your gas grill. Place a sheet of baking paper on the flame retardant inserts under the marinated pork belly cubes. Cook the meat over indirect heat and don't forget the grill so that the pork belly doesn't fall through the grill grate.
