Coffee and caramel brownies

Coffee and caramel brownies were an inspiration when I needed chocolate. Don't take this the wrong way. It wasn't just a desire. It was more of a need. At this point I needed strong, warm, gooey, melty chocolate. So I decided to make brownies. 9 times out of 10, chocolate becomes even better with coffee. So I added some espresso powder to spice things up a bit. I even added some Greek yogurt to make the brownies a little fluffier. Then I topped the brownies with a dollop of caramel sauce. The result? Delicious, strong, warm, gooey, melty chocolate brownies!
INGREDIENTS
- 200 g dark chocolate, chopped
- 3/4 cup sugar
- 1/4 cup melted butter
- 1/4 cup plain yogurt
- 2 eggs, large
- 1 tsp vanilla
- 3/4 cup flour (sifted)
- 1 tbsp instant espresso powder
- 1/4 tsp baking soda
- 3 tbsp caramel syrup (ice cream topping)
- Chocolate pieces and/or nuts (optional)
PREPARATION
- Preheat the grill to 180 °C and prepare for indirect grilling.
- Melt the chocolate in a water bath over medium heat, stirring evenly. Let the chocolate cool for a minute or two while you prepare the remaining ingredients.
- Mix butter and sugar together. Then add the eggs one at a time, followed by the vanilla.
- Sift the flour, espresso powder, salt and baking powder together, then add to the butter mixture and stir until combined.
- Pour the melted chocolate into the dough, then add any chocolate or nuts. Pour the brownie batter into a prepared greased baking pan (20cm x 20cm). Drizzle with 3 tablespoons of the caramel topping.
- Bake over indirect heat for 35 minutes or until the brownies are just set and the corners are slightly crispy. Depending on the temperatures outside, this may take a little longer. Halfway through, rotate the baking pan so that all edges of the brownies are exposed to heat.
- Serve warm or cold depending on your taste. Fruit, whipped cream, French vanilla ice cream and even more caramel topping go well with this.
