Croque monsieur
BY: ANDREA ALDEN
This croque is no ordinary ham and Swiss cheese sandwich! This grilled Croque Monsieur is perfect if you're hungry for a little gourmet delicacy and don't want to eat so much and heavy dinner. COBS Bread's herb focaccia gives the croque a new dimension. It's like grilled cheese with sauce, topped off with herb flavor. It is topped with cheese that melts and forms strings, and is also gratinated with cheese! Where does this recipe come from? It's a far cry from a traditional Croque Monsieur, especially considering I used Italian herb focaccia and Swiss cheese. Don't let that bother you and try it for dinner today. (Especially when it's super hot outside again. When I made it, it was 46°C!)
INGREDIENTS
- Béchamel sauce
- 3 tbsp butter
- +/- 1/3 cup flour
- 1 1/4 cups milk
- Pinch of nutmeg
- Salt and freshly ground pepper to taste
Croque Monsieur
- 1 Italian Herb Focaccia Bread from COBS Bread
- 10 slices of Swiss cheese
- 10 slices of ham (thickly sliced)
- 1 cup grated cheese, optional (parmesan, cheddar, mozzarella)
PREPARATION
- Preheat the grill to 200 °C and start preparing the béchamel. Melt butter in a saucepan on the side burner over medium heat. Once the butter has melted, add the nutmeg and flour. Stir everything together and let the butter-flour mixture simmer for about 2 minutes. In the meantime, cut the Italian herb focaccia in half
- Gradually add the milk to the butter-flour mixture, stirring each time until there are no lumps left. If the béchamel has become too thick, add more milk, 2 teaspoons at a time. If the sauce has become too thin, let it cook until it thickens.
- While the sauce is simmering, toast the focaccia halves over direct heat.
- As soon as the bread is toasted and the béchamel is ready, the sandwich can be topped. First spread the béchamel generously on the bottom and top halves of the bread, then cover the bottom half of the bread with Swiss cheese, spread two layers of ham on top and finally cover with Swiss cheese again.
- Place the top half of the bread on top and, if desired, sprinkle with grated cheese. Grill sandwich over indirect heat for 15 minutes, or until cheese has melted and everything is hot.
- Cut the sandwich into quarters and serve with the remaining béchamel and a delicious salad for dipping.
This grilled Croque Monsieur is a complete gourmet meal and is a light, not too hot meal. It has its origins in French cuisine and is simply delicious. It can be enjoyed with a side salad in summer and with a soup in winter. What do you grill for dinner on hot days?
