Dad's Maple Smoked Ribs

Fathers don't want much for Father's Day. A little time to relax, a day without responsibilities and a good meal. Dad's maple smoked ribs are just the thing. This simple recipe will always be remembered. The smoky flavor and sticky sauce complete this dish and it's just perfect to serve to dad after a busy Father's Day.
INGREDIENTS
- 4 strands of pared back ribs
- Napoleon Smoker Chips (maple/apple)
- Napoleon Smoker Tube
For rubbing in
- 1 1/2 tbsp dried garlic
- 1 tbsp coarse sea salt
- 1 tbsp smoked paprika
- 2 tsp dried thyme
- 2 tsp onion powder
- 1 tsp cayenne pepper
- 2 tsp freshly ground black pepper
- 2 tsp dried parsley
- 1/4 cup brown sugar
Sauce
- 1 pack of Smokehouse Maple Wet Rub from Club House La Grille
- 1/2 cup garlic sparerib sauce
- 2 tbsp maple syrup or honey
PREPARATION
- The day before, mix all the ingredients for rubbing the ribs in a bowl. Remove silverskin from the back of the ribs and then brush each rib with the seasoning mixture. Place a wire rack on a baking sheet and place the ribs on the rack and let them dry in the refrigerator overnight.
- To grill the ribs, fill the Napoleon smoking pipe with your favorite smoking chips, raise the grill grates and place the smoking pipe on the grill's flame guards.
- Preheat the grill to 120°C to 150°C by lighting one or two burners, including the burner over which the smoker pipe is placed.
- Once the grill has reached the desired temperature and the smoker is smoking lightly, place the ribs on the grill grates. Be careful not to place them over direct heat. Grill slowly over indirect heat for two or three hours, or until a nice crust has formed on the outside and a meat thermometer registers an internal temperature of between 145°F and 165°F. Smoking chips must be re-added several times.
- Once ribs are tender and smoked, remove them from the grill and set aside. Preheat grill to 230 °C for searing.
- Mix the spice mixture, spare rib sauce and syrup in a bowl. Brush ribs with mixture, then sear each side over direct heat for 2 to 5 minutes, until caramelized and ribs have grill marks. Do not leave the ribs on the grill for too long or they will burn.
- Serve ribs immediately with a delicious potato salad and vegetables.
