INGREDIENTS
- 1 whole chicken
- 2 tsp salt
- 2 tsp pepper
- 2 tsp rosemary
- 2 tbsp olive oil
- 1 1/2 cups dry white wine
- 1 Napoleon Rotisserie Kit
PREPARATION
- Remove the warming rack from the grill. Place the rotisserie motor on the mounting bracket. Set the rear burner on your Napoleon grill to a high temperature, usually between 230°C and 260°C.
- Remove the chicken and trim off any excess fat. Rinse and dry with paper towels.
- Pour the olive oil over the chicken. Then sprinkle with salt, pepper and rosemary. Rub the meat evenly with the spices. Tie the wings and legs together with butcher's twine.
- Push a rotisserie fork a little more than halfway onto the spit rod. Tighten wing screws. Skewer the chicken with the skewer rod and secure it with the fork that is already on the skewer rod. Slide the other set of forks onto the skewer rod and press the pointed ends into the meat. Then tighten the wing screws so that everything is secure.
- Place the prepared construction on the grill. Make sure that the chicken is centered over the rear burner. Turn on the rotisserie motor. Place a drip tray under the chicken and add the wine.
- Roast the chicken for about 15 minutes or until it looks crispy on the outside. Turn off the grill so that the temperature inside the grill drops to about 175°C. Cook the chicken for about 20 minutes per 500g, until an thermometer registers 74°C.
- Take everything from the grill using heat-resistant gloves and place on a plate. Cover with aluminum foil, leaving the skewer stick in the chicken. Let rest for 10 to 15 minutes before carving. During this time, prepare a sauce from the wine and the frying fat.
- If you want to carve the chicken, pull out the skewer and fork and then carve normally. Serve with your favorite vegetables, potatoes and of course the sauce.
