Game steak

I tried venison for the first time in 2011 and shared it here on the Napoleon Recipe Blog. This week I'm making the recipe for Venison Steaks with Lemon and Herbs again and I'm going to enjoy it again. This recipe is perfect for those who want to try game but aren't sure if they'll like it. As with beef, the taste of the game, which tastes slightly spicy, is rounded off by the “Club House Lemon & Herb” spice mixture. Reverse cooking, where the meat is slowly cooked before grilling at high temperatures over the infrared SIZZLE ZONE™, makes the meat more tender without losing flavor.
INGREDIENTS
- 2 steaks from game
- Spice blend “Club House Signature Blends Lemon & Herb” or your own creation
- Salt and freshly ground pepper to taste
- 12 florets of Brussels sprouts, cleaned and halved
- 1/4 cup melted butter
- 1/4 cup water
PREPARATION
- Preheat grill to 150 °C and prepare for indirect grilling.
- Rub the venison steaks generously with the “Lemon & Herb” spice mixture, salt and pepper as desired. Place the halved Brussels sprouts, cut side up, on a baking tray, drizzle with butter, and then season with salt and pepper to taste. Turn the seasoned Brussels sprouts over and then pour water into the baking tray.
- Place the venison steaks and Brussels sprouts on the grill over the turned off burners (indirect heat) and close the grill lid. Now let the meat marinate for 35-40 minutes until the game has reached a temperature of 60 °C. Then take the game off the grill. When the Brussels sprouts are cooked and slightly caramelized at the cut corners, remove the Brussels sprouts from the grill. If not, wait until the game has finished cooking on the infrared SIZZLE ZONE™.
- Preheat the infrared SIZZLE ZONE™ and fry the steaks over direct heat for 1-2 minutes per side until they have grill marks.
- Let the steaks rest for 5 to 10 minutes. Then serve with the Brussels sprouts and your favorite side dishes.
I don't know which part of this dish I like the most. Cooking and eating these venison steaks with lemon and herbs or preparing them for the photos. Oh, who am I kidding? It's the food, of course.
