Grilled Butter Snapper

I needed a white fish for a lunch recipe at work. Yes. I grill at work and at work and feed my colleagues. This is what I do when I'm not typing. I have the best job.
Okay, I digress. I needed fish. I needed something else. So I walked up and down the fish counter in a local supermarket. I asked for a cheap fish that could be obtained in large numbers immediately. The nice saleswoman proposed with the Sebastes. Yes. As a newbie to the world of fish, I stared at her. What is a Sebastes? Doesn't sound so good. Maybe a little too Sebastian-y? (Ba Dum Tss) You may know him as Black Snapper. And here's how to quickly grill it for an incredible meal.
INGREDIENTS
- 8 fillets of black snapper or seabastes
- 1/4 cup melted butter
- 1 tbsp garlic/herb/spice mixture, e.g. B. Mrs. Dash
- 1 tsp lemon pepper
- 1 tsp parsley
Grilled vegetable salad
- 1 tbsp oil
- Salt and pepper to taste
- 1 bunch of asparagus
- 1 red pepper
- 1 green pepper
- 1 red onion
- 1 Bun Broccoli
- 1/3 cup René's Mighty Caesar Dressing
- 1/4 cup Parmesan
PREPARATION
- Grease the grid and preheat the grill to 200 °C.
- Place a PRO stainless steel attachment over direct heat. Mix the vegetables with oil, salt and pepper and place on the PRO attachment to grill, turning constantly. If the vegetables burn and are not cooked through, reduce the heat.
- Garnish vegetables as desired, then mix with René's and Parmesan. Keep the whole thing warm.
- Add the herbs to the butter before melting, then melt the butter. This allows the butter to absorb the flavor of the spices. An aroma enhancer!
- Brush the fish fillets with the butter and herb mixture and grill over direct heat, drizzling and turning the fish. Grill the fish for 3 minutes per side or until the fish flesh is cooked through and slightly crumbly. Be careful not to overcook the fish.
- Serve with the vegetable salad and fresh bread with butter
That was really delicious. The smoky aroma of the grill and the buttery taste completed this fish dish. Black Snapper/Sebastes is a fish with a slightly fishy taste. So not as fishy as tuna.
