Grilled grapefruit

I can hear you laughing out loud in front of the screen! How can Grilled Grapefruit with Homemade Cheesecake Ice Cream be a simple and easy recipe?! Well, it can! Now I'll show you how to do it! First of all, you make homemade ice cream in a very simple way. Just 4 ingredients and mix everything well, then put the whole thing in the freezer. Complete! When the ice cream is ready to serve, cut a grapefruit in half and grill it on a simmering hot grill. Serve the grapefruit warm with the ice cream! Voila! This is a simple dessert.
INGREDIENTS
- 4 grapefruits, preferably the “Oro Blanco” variety, but other varieties are also suitable.
- 2 tbsp sugar
- fresh mint for garnish
No Churn Cheesecake Ice Cream
- 2 cups whipped cream (with smoked flavor if possible)
- 1 tbsp vanilla extract
- 1 can (300 ml or 1 1/4 cups) sweet condensed milk
- 1 cup cream cheese
PREPARATION
- Before you begin, place a metal or glass bowl in the freezer along with the beaters while you gather the ingredients. This makes whipping the cream quicker later.
- Add vanilla, canned milk and cream cheese to a medium bowl. Use cream cheese as it is already light and fluffy and won't leave lumps in your batter. Mix these ingredients together until you get a smooth mixture.
- Whip the cream in the chilled bowl until soft peaks form. Gently stir in the cream cheese mixture. Put everything in a loaf pan or leave the mixture in the bowl and refrigerate for at least an hour or until the mixture has set.
- When it's time for dessert, preheat the grill to 260°C for roasting. Cut the grapefruits in half and sprinkle them with a little sugar.
- Grill the grapefruits, fruit side down, directly over the burner until they begin to brown. Then turn off the grill and place the grapefruits, fruit side up, on the warming rack for 5 minutes.
- Once the grapefruits are fully grilled and tasting delicious, place them on dessert plates and carefully cut around the edge to loosen the flesh pieces. Serve warm with homemade cheesecake ice cream and mint garnish.
The trick to this recipe is to buy sweet grapefruit. As mentioned above, it is best to take the “Oro Blanco” variety. But you can also get ruby red grapefruits, which are sweet. That's what happened to me. Sweet grapefruits have thin skin and thick, firm flesh. This easy Grilled Grapefruit with Homemade Cheesecake Ice Cream recipe was simply delicious.
