Grilled haddock

One evening my husband and I went to a shopping center and saw that a branch of the fast food chain Nando's was opening there. My husband immediately started raving about the rice. And I immediately started thinking about a recipe for this rice. In case you don't know, the dishes at Nando's are piquantly spicy and are usually made with piri-piri (chilli peppers). I put together a list of the spices that I think give the rice its incomparable taste. That's how this recipe for Grilled Haddock with Spicy Rice came about. It was a little spicier than I thought it would be, but the scent was amazing. A perfectly grilled haddock fillet marinated in garlic, butter and piri piri seasoning, served over a generous portion of vegetable rice. My husband and I agreed, simply a heavenly taste. Try this haddock recipe and you'll understand why we loved it.
INGREDIENTS
- Piri-piri spice
- 2 tsp salt
- 2 tsp oregano
- 1 tsp paprika
- 2 tsp cayenne pepper
- 2 tsp black pepper
- 2 tsp garlic powder
- 2 tsp onion powder
- 2 tsp cumin
- 2 tsp chili flakes
- 2 tsp turmeric
Grilled fish
- 4 haddock fillets
- 2 tbsp melted butter
- 1 garlic clove, grated
- 1 tsp piri-piri seasoning
Spicy rice
- 1 cup rice
- 3 tbsp butter
- 2 tsp piri-piri spice
- 2 cups chicken broth
- 1 tbsp butter
- 1 tsp piri-piri spice
- 1/2 red pepper, chopped
- 1/2 green pepper, chopped
- 1/2 onion, chopped
- 1 garlic clove, grated
PREPARATION
- To prepare the piri piri seasoning, place all the spices in an airtight container. Shake well.
- Coat grill grates well with a heat-resistant oil, such as coconut oil or rapeseed oil. Preheat grill to 260° C.
- Melt 2 tbsp butter, add garlic and piri-piri spice and let it steep while you prepare the rest.
- Melt 1 tablespoon of butter over the side burner, add piri-piri seasoning and stir. Then add peppers and onion and sauté over medium heat until softened. Place in a container and set aside. In the same pan, melt 3 tablespoons butter and add piri piri seasoning. Lightly fry the rice in the melted butter until fragrant. Approx. 3 minutes.
- Pour the chicken broth into the rice in small amounts at a time. Stir each time until the liquid has been absorbed. Repeat this step several times until the rice has the consistency you desire. Add previously stewed peppers and onions and keep warm.
- Generously brush both sides of the fish fillets with the butter that was melted in step 3. Grill the haddock over direct heat while brushing with the butter. About 2 minutes per side or until the fish flesh can be easily separated and is opaque.
- Serve fish fillets on or alongside the rice and enjoy hot.
