
Grilled salmon

My husband ate a lot of fish as a child. Not me. I didn't eat any fish at all. And it took me some time to venture into seafood. But, little by little, I also became a fish eater. Salmon is my absolute favorite fish and this grilled salmon with fresh herbs and feta cheese is simply delicious. Fragrant fresh herbs and creamy, tangy feta cheese on a meaty salmon fillet. Ideally served with crispy roasted potatoes (with fresh dill and a squeeze of lemon juice).
INGREDIENTS
- 1 salmon fillet is enough for 2 to 4 people.
- 1 tbsp red onion chopped
- 3 fresh basil leaves
- 2 tbsp fresh dill
- 2 tbsp fresh chives
- 1/4 cup crumbled feta cheese
- 1/2 fresh lemon
- Salt and pepper to taste
PREPARATION
- Preheat the grill to 200 °C and prepare the grill grates for the direct grill method.
- Roughly chop all the herbs and garlic on a sturdy cutting board. Add crumbled feta cheese and chop everything together again.
- Season the salmon lightly with salt and pepper. Use salt sparingly because feta cheese is already salty. Add a small squeeze of lemon.
- Place salmon, skin side down, on grill and grill over direct heat for 10 to 15 minutes, or until salmon can be easily separated with a fork.
- Serve the salmon hot with your favorite vegetables and crispy roasted potatoes. And remember to drizzle the salmon with a little fresh lemon.
