
Lamb and beef grill gyros

Lamb & Beef Grilled Gyros is a recipe that I've been itching to try for a while. I saw the giant, spinning cones of meat at Greek food stalls, tasted the succulent meat cut from the ever-spinning spit and served with feta and fresh tzatziki. I really wanted to recreate this on my grill. When it comes to taste, this recipe is a huge hit. Unfortunately the meat didn't want to stay on the spit and so I fried it that way instead. But don't let that put you off. When you try your first bite you will be amazed.
*PRO TIP – save the drippings for making the sauce. It has a full flavor and gives the sauce a depth of flavor that bacon or butter can't give it.INGREDIENTS
- 500 g minced lamb
- 500 g ground beef from the brisket
- 2 tbsp bacon fat
- 3 tsp kosher salt
- 1 teaspoon freshly ground black pepper
- 1 1/2 tsp dried oregano
- 2 cloves of garlic, grated
Homemade Tzatziki
- 3/4 cup Balkan natural yogurt or Greek-style yogurt
- 1/4 cup mayonnaise
- 2 cloves of garlic, grated
- 1/2 lemon, juiced
- 2 tbsp chopped cucumber
- 1 pinch of salt
To taste
- soft Greek pita bread
- chopped fresh tomatoes
- chopped fresh cucumbers
- Sliced red onions
- crumbled feta cheese
- Salad
- French fries
PREPARATION
- Place the meat, bacon, salt, pepper, oregano and garlic in the bowl of a food processor. Mix the meat mixture with short pulses until everything is thoroughly mixed, but stop before the meat becomes liquid.
- Form a cylinder with your hands and wrap the meat mixture tightly in cling film. Refrigerate meat for an hour or prepare 24 hours earlier.
- While the meat is cooling, make some fresh tzatziki, as this sauce is even better when the flavors have melded together. Mix yogurt, mayonnaise, garlic, lemon juice and cucumber in a bowl. Chill in the refrigerator until you are ready to serve the gyros.
- Preheat grill to 190 °C and prepare for indirect grilling. Place meat on a rack over a grill drip tray. Slowly fry the meat until it reaches an internal temperature of 70°C. Remove the meat from the grill and let it rest for a few minutes before carving. While the meat rests, bring pot of water to a boil and steam pitas.
- Cut meat as thinly as possible. Spread fresh tzatziki on a steaming pita, generously place slices of meat on top, plus vegetables, feta, maybe a little more tzatziki and a side of fries.
Lamb & Beef Grilled Gyros There is debate about how to actually pronounce gyros. Is it called “Güros” or “Jiros”? A true Greek pronounces it “Jiros,” but however you pronounce it, you’ll love the intense flavor. I want to be honest. I first tried roasting the meat on a spit. At first it went well, the outside browned beautifully. After about 15 minutes the meat could no longer hold its 1350g on the spit and I heard a splash as it slid off. So yes, it is conceivable to roast this gyro meat in the oven if you want. Still, grilled meat somehow tastes better.
