Lemon pepper chicken wings from the grill

Grilled Lemon Pepper Grilled Chicken Wings were originally made in January 2013. They're always a hit, whether you're serving them for dinner or at an event. I first tried these chicken wings at a bar & grill called Taco Mac while visiting my dad. I knew immediately that I had to try making them myself. Well, most restaurants deep fry chicken wings. But this is a grill recipe and that's why we grill them too! To get that delicious crunch that comes from deep-frying, be sure to rub the wings with a mixture of salt and baking soda. If you do this and then air dry the wings, it will remove the moisture; like when we cooked Peking duck on the grill.



INGREDIENTS

  • 1 tbsp baking powder
  • 2 tsp salt
  • 500 g chicken wings
  • 4 tbsp lemon pepper
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 2 tsp bone meal
  • 2 tbsp oil
  • 2 to 4 cedar planks, soaked for at least 30 minutes



PREPARATION

  1. The night before, roll the wings in a mixture of salt and baking powder. Allow the wings to dry uncovered on a rack lined with baking paper in the refrigerator until it's time to grill. About 24 hours.
  2. Preheat grill to 230°C and prepare for indirect cooking. If you have three burners, leave the middle one turned off. Just two? Turn off the burner furthest from the gas tank when the grill is heating. Preheat the grill boards and season the chicken wings.
  3. In a bowl, combine lemon pepper, bone meal, onion and garlic powder. Drizzle wings with 2 tablespoons oil; make sure that each wing gets some oil.
  4. Lightly coat each chicken wing in the spice mixture. Arrange the wings covered with the spice mixture on the oil-soaked grill boards.
  5. Fry the wings on the grill boards for 20 minutes. Turn the wings over and cook on the grill boards for another 20 minutes or until the internal temperature reaches 75°C and the outside is crispy. Serve with your favorite beer, some vegetables and a dip!


The Lemon Pepper Grilled Chicken Wings will not only bring back wonderful memories of travel and family; Their taste also goes very well with an I.P.A. or Pilsner. Eat them with a good friend or double/triple the recipe if you're grilling for a crowd.



PRO TIP:

If for some reason you don't have time to dry the wings overnight, you can steam them for 10 minutes. Bring some water (a few centimeters on the bottom of a pot) to the boil. Season the wings with a little salt and possibly a little pepper. Steam the wings in a steamer basket over the water for 10 minutes. Make sure each wing has some space so that the water vapor can completely envelop it. Remove from the steamer and dry on kitchen towels. Then grease, season and grill.
