Margarita ice cream
BY: ANDREA ALDEN
Try something fun and fresh that you can enjoy with your friends and family for dessert. This margarita ice cream is fantastic, not too sweet and even gluten free! This recipe tastes just like margarita! The lime flavor isn't as terribly sour as you'd think, and the tequila doesn't dominate everything. This recipe is easy to prepare and doesn't require too much effort. Serve it on the Napoleon Himalayan Salt Stone Set for that real margarita taste. This provides a counterpoint to the sweetness and creates a perfect margarita taste. Grill limes with extra love directly over the burner on the Rogue® gas grill. To make the whole thing even more delicious, smoke the cream over indirect heat.INGREDIENTS
- 4 limes
- 1 lime, grated
- 1/4 cup of tequila
- 2/3 cup powdered sugar
- 2 cups whipped cream
- 1 drop of green and yellow food coloring (optional)
- Napoleon Himalayan salt stone set
- Salt for the salt rim of your serving bowl
PREPARATION
- The evening before, put the Himalayan salt plate in the freezer so that it is completely frozen when you want to serve the ice cream. Make sure the salt plate is not damp and that it is at room temperature before freezing to avoid damage.
- Before stirring, place a glass or metal bowl that can hold at least 5 cups of liquid in the freezer. Also put the mixing hooks in there.
- Wash the limes and peel one of them. Squeeze two limes and mix the powdered sugar and tequila with the juice.
- Take bowls and mixing hooks out of the freezer. Pour the cream into the bowl and beat at the highest level. When the cream begins to thicken, slowly pour in the lime mixture. Add food coloring if you wish. Continue whipping the cream until soft peaks form. (As you drag a finger through the cream, the peak you created in the cream will fall forward). Do not mix until the peaks become firm. Then the ice cream becomes hard and freezes when it freezes. Quickly pour whipped cream mixture into an 8x12 inch bowl. Freeze for at least 2 hours before serving.
- When ready to serve, halve the remaining lime and drizzle juice around the edge of your serving bowls using one half. Dip the bowls in salt to make a salt rim and garnish with a lime wedge. Using an ice cream scoop, add the margarita ice cream to the Himalayan salt plate and garnish with lime zest. Let the guests serve themselves from the plate so that the ice cream stays frozen.
When you enter the room carrying the Himalayan salt rock set covered in margarita ice cream with salt-rimmed bowls to serve the ice cream in, everyone in the room gasps and goes wide-eyed. Don't worry, the party doesn't end there. The ice cream will have everyone in the room cheering as soon as they start eating. It is the ideal dessert for almost any occasion.
