Mocha cupcakes

I don't know about you, but I'm a big fan of chocolate and coffee combinations. National Dessert Day was approaching and I just had to make a dessert appropriate for the occasion. Smoked Coffee & Toffee Mocha Cupcakes are great to transport and even people who aren't coffee fans will like them. (I say this with certain people in mind; you know what kind you are...) Who wouldn't go crazy for these mocha cupcakes when they're topped with even more chocolate, toffee bits, and coffee-chocolate ganache?
INGREDIENTS
- 1 cup wheat flour
- 1/3 cup + 2 tbsp cocoa
- 1 cup + 2 tbsp sugar
- 1/2 tsp salt
- 1/2 tsp baking soda
- 1/2 cup melted butter
- 2 eggs
- 1 tsp vanilla extract
- 1/2 cup of fresh, hot coffee
Chocolate buttercream frosting
- 1 cup cooled, salted butter (not fresh from the fridge but not at room temperature either)
- 3 cups powdered sugar
- 1/4 cup cocoa powder
- 1 tbsp vanilla extract
- 4 tbsp whipped cream and/or cold coffee
- 4 chocolate bars, crushed/crushed
Chocolate coffee ganache
- 1/2 cup of freshly brewed coffee
- 1/2 cup cream
- 1 cup coarsely chopped dark chocolate
PREPARATION
- Dice watermelon and feta cheese. Meanwhile, soak the skewers.
- Very carefully place a watermelon cube on the skewer, then a feta cube and another watermelon cube. Feta is crumbly. Therefore cut and skewer carefully.
- Place the prepared skewers in the freezer for 15 minutes while you preheat the grill to 230°C.
- When the grill has reached the right temperature, remove the skewers from the freezer and pat dry with a kitchen towel. Never forget: Moisture is the enemy when frying.
- Place the skewers on the grill over direct heat. Grill for 1 to 2 minutes on each side or until grill marks form on the watermelon.
- Drizzle with balsamic vinegar reduction and sprinkle with fresh basil and serve immediately.
The flavor combination of watermelon and feta in these skewers simply has that special something. The intense aroma of basil and feta and the juicy, cool melon create a surprising contrast that you will want more of. Like chocolate with pretzels.
