Oatmeal cookies

Oatmeal cookies are really delicious. The cinnamon scent, raisins and soft texture give these cookies that certain something. This grilled dessert will delight any cookie fan. It's hard to believe that these oatmeal raisin cookies are made on a grill.
INGREDIENTS
- 2 cups flour
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 tsp cinnamon
- 3/4 cup butter, at room temperature
- 1 cup brown sugar
- 2 tsp vanilla extract
- 2 eggs
- 1 1/2 cups tender rolled oats
- 1 cup sultanas
PREPARATION
- Preheat the grill to 160°C by lighting one or two external burners, the internal burners remain switched off.
- Using a stand mixer or hand mixer, beat the butter with the sugar until the mixture is light in color and slightly fluffy, about 2 minutes. Add eggs and vanilla and stir for another 2 to 3 minutes.
- Sift together the flour, baking soda, cinnamon and salt. Add the sifted ingredients to the wet ingredients and mix.
- Use a wooden spoon to fold in the oat flakes and raisins.
- Line the baking tray with a baking mat or baking paper. Form 2 tablespoons of cookie dough into balls. Flatten the balls. One baking tray is enough for 12 cookies.
- Bake cookies for 12 to 16 minutes over indirect heat, just one sheet (12 cookies) at a time. In my experience, 15 minutes is the optimal baking time. Afterwards the edges were crispy and the inside of the biscuit was still nice and soft. But depending on whether you like the cookies soft or a little harder, you can shorten or lengthen the baking time.
- Remove cookies from grill and place on a rack to cool. Repeat the processes until all the dough is used up.
- For a perfect cookie experience, serve cookies with a large glass of cold milk.
These grilled oatmeal cookies are simply delicious. Just what I needed. I often crave homemade cookies and with this simple recipe they can be made in no time. You can also bake the cookies in a conventional oven. The dough can be formed into balls and then frozen, so whenever you have a cookie craving, you can scoop out a ball or two and bake a few cookies. What are your favorite cookies?
