
Ribeyes over charcoal

Ribeye steaks are among the tastiest steaks on the market. They are priced slightly higher, but if you're in the mood for a hearty steak, it's an ideal choice. One thick steak is easily enough for 2 people. They're delicate and along with the wonderful scent of charcoal...there's just nothing better. In this recipe you will learn how to cook the ribeye steak on a charcoal grill using reverse cooking.
INGREDIENTS
- 2 thick-cut ribeye steaks
- approx. 4-5 cm thick
- 1 tbsp kosher salt
- 1 tbsp dried garlic
- 1/2 tbsp freshly ground black pepper
- 2 tbsp butter
- (to taste) pecan or mesquite smoking chips
PREPARATION
- Light a single batch of charcoal using a chimney starter. Once lit, pour the charcoal onto one side of the charcoal grill, creating a two-zone fire. Open the air vents on the bottom of the grill only to the smallest opening. Preheat the grill to approx. 120 to 150 °C.
- While the grill is preheating, rub the steaks with salt, garlic and pepper. If you are using a digital thermometer, insert the probes and set the desired “through” temperature – about 10 to 12°C less than “all the way through.” For halfway through, approx. 50 °C.
- Place the steaks on the grill some distance from the charcoal. If you are using wood smoking chips, spread them over the charcoal. Close the lid and let the steaks slowly grill and smoke. This technique is called “reverse grilling” and allows the fat to be rendered, making the meat even more flavorful and tender.
- When the steaks are heated to approximately 40°C, open the vents on the bottom of the grill to allow more air to pass over the charcoal. If the grill doesn't get any hotter, you can always add more lit charcoal to create a heat zone for searing.
- As soon as the steaks have reached a core temperature of approx. 45 to 50 °C, fry them over direct heat. Sear for a minute or two, rotate the steaks 90°, continue to grill for a few minutes, flip and repeat until you have perfectly seared steaks.
- Let the steaks rest for about 5 minutes before slicing and serving with a pat of butter on top and your favorite accompaniments.
- While the steaks are resting, brush down your grill grates and then close all charcoal grill vents to extinguish the charcoal.
