
Roasted carrots with maple syrup and mustard

I've made roasted carrots with maple syrup and mustard several times. This dish is most often requested when I offer to bring something to family gatherings. The relatively simple glaze is full of umami flavor. This side dish brings color to the table. The intense roasted flavor of the carrots goes perfectly with any other dish. You can use normal carrots or more unusual young carrots that still have their green. However you slice or peel them, this side dish is simply delicious!
INGREDIENTS
- 20 (910 g) carrots
- 2 tbsp roasted garlic oil
- 2 tbsp maple syrup
- 1 tbsp grainy Dijon mustard
- 1/2 tbsp Dijon mustard
- 1/2 tbsp Aka Miso Paste
- 1/2 tbsp rice wine vinegar
- 2 tsp soy sauce
- 1 tbsp fresh thyme leaves
PREPARATION
- Preheat grill to 200 °C and prepare for indirect grilling.
- Peel and clean all carrots. Cut carrots to desired length and thickness. I would halve anything that is more than 2 cm thick.
- Stir together garlic oil, maple syrup, mustard, miso, vinegar and soy sauce in a bowl or measuring cup. Dip the carrots in this sauce and then arrange them in a single layer on a baking sheet. Pour the remaining sauce over the carrots.
- Bake over indirect heat for 40 minutes or until the carrots are fork-tender.
- Sprinkle carrots with thyme leaves and serve immediately.
