Scones (tea biscuits) from the grill

Ever since I tried my favorite bakery's amazingly good scones, I've been crazy about them. And when we planned a breakfast in the office where everyone would bring something, I KNEW immediately what it would be. Scones! Scones with fresh homemade jam! At that time we had very hot weather, temperatures around 46°C, and I couldn't bake in the kitchen. Our poor air conditioner already had enough to do. So I decided to bake the scones on the grill.
INGREDIENTS
- 5 cups of wheat flour
- 2 tbsp baking powder
- 2 tsp cinnamon
- 1 tsp salt
- 1/3 to 1/2 cup sugar (depending on desired sweetness)
- 1 cup cold butter, cut into cubes
- 1 1/3 cup milk
- 1 cup chocolate chips or raisins (optional)
PREPARATION
- Preheat the grill to 220 °C and prepare for indirect grilling. Place a cast iron grill tray or Napoleon baking stone on the grill to preheat it as well.
- Sift all dry ingredients into a large bowl. Using a pastry knife, add pieces of butter until the flour resembles lumps of sand. Stir in the milk with a wooden spoon until an irregular ball of dough forms. Knead the dough a little more in the bowl and then separate 1/3 of the dough. Continue kneading the separated dough on a floured surface - 3 or 4 kneading times are sufficient. **At this point, chocolate chips, apple slices, raisins, dried cranberries or other delicacies can “accidentally” “fall” into the dough and be mixed in. Of course I wouldn't tell anyone about this.
- Form the dough into a flat square with your hands or a rolling pin and cut into quarters. Cut the quarters diagonally and form scones. Do the same with the remaining dough.
- Place the cut out dough pieces on a baking tray lined with baking paper. Use the Napoleon baking stone, place the baking paper or a baking mat directly on the stone.
- Bake the scones for 10 to 15 minutes or until they turn a golden brown color.
- Remove the scones from the grill and let them cool. Serve with tea, sour cream and homemade jam.
The recipe makes enough scones. I wanted to bake about 20 scones and when I was finished I had 24 medium sized scones and was very happy with the result. Baking scones on the grill is very easy and the kitchen or the entire house stays cool. The recipe is simple and quick! What do you like to bake on the grill?
