
Smoked chicken wings

I want to get everything out of it when I use the smoker. You work with the smoker for a very long time anyway. Everything is included between 4 and 16 hours, sometimes even more. And if you invest so much time, you can get a lot out of that time. When we made the Homemade Southwest Smoked Bacon, I also prepared a few other things that could be smoked at the same time. I had frozen some chicken wings and didn't know what I wanted for dinner. Smoked chicken wings just sounded incredibly good. You sit there and smell the meat that is being smoked. And so the smoked chicken wings with spicy bourbon sauce were created. At least that's how the smoked chicken wings came about. The sauce was totally messed up. I didn't want to take the easy way out and buy a ready-made sauce, so I thought I could just mix a sauce together. Unfortunately that didn't work at all. My mixing ratio was simply catastrophic at the beginning. But after adding a little of this, a little of that, and a good shot of bourbon, I ended up with a delicious hot sauce.
INGREDIENTS
- 500 g chicken wings, split
- 3 tbsp “Cattle BoyZ Big Country Garlic” spice mix
- 1 tsp chili flakes
- 1 pack of wood chips, soaked for 30 minutes
Hot bourbon sauce
- 1/2 onion, chopped
- 1 garlic clove, grated/chopped
- 1 chili, chopped,
- (variety according to taste and spiciness)
- 1 tbsp bacon fat
- 3/4 cup sugar syrup
- 1 cup ketchup
- 1 tbsp red wine vinegar
- 1 tbsp soy sauce
- 85 ml Bourbon Whiskey
- Sriracha or Sambal Olek to taste (optional)
PREPARATION
Preheat smoker to 90-105 °C. Soak smoking chips, variety of your choice. We used apple wood chips here, but mesquite or hickory wood would also be suitable.
- Toss chicken wings with “Big Country Garlic” and chili flakes.
- Place the chicken wings on the grill grate at least 2.5 cm apart. This ensures that the smoke penetrates optimally.
- Smoke the chicken wings for about 2 hours, turning them at least three times and topping up the smoking chips as needed.
- For the sauce. Melt bacon fat in a frying pan. Add onion and chili. Once the onion is translucent, add the garlic and cook for another minute.
- Add sugar syrup, ketchup, vinegar, soy sauce and bourbon. Simmer gently for at least 5 minutes. Taste and increase or decrease the spiciness of the sauce by adding Sriracha or honey.
- Preheat the grill to 200°C.
- Mix the smoked chicken wings with the sauce. Grill chicken wings over direct heat for 5 minutes until heated through. Serve immediately with damp towels and a good drink.
These smoked chicken wings with spicy bourbon sauce were so good that guests who had recently eaten a filling meal at their parents' house ate almost eight chicken wings in five minutes. And that’s because they are simply “SO GOOD!” Yes, they didn't last long. But you will definitely need a drink that will tone down the spiciness a bit.
