Smoked vanilla bean ice cream

For smoked ice cream, you first need to smoke cream. This is surprisingly easy and gives the cream a delicate flavor that complements salty, savory flavors. Smoked vanilla bean ice cream with candied bacon and caramel is a versatile treat. It goes perfectly with the ice cream sundae for National Sundae Day. This simple, uncomplicated ice cream recipe has what it takes to become your favorite dessert.
INGREDIENTS
Smoked cream
- 1 l whipped cream
- Apple, cherry, maple or pecan wood smoking chips
- Napoleon PRO Smoker Tube made of stainless steel
Candied bacon
- 6 slices of bacon
- 1/4 cup maple syrup
- 1/4 cup brown sugar
Ice cream
- 2 cups smoked cream
- 1 tbsp vanilla extract
- 1 tbsp rum (optional)
- 2 vanilla beans, scraped out
- 1 can (300 ml) sweet condensed milk
- candied bacon, crumbled
- 1/2 cup caramel syrup
PREPARATION
- Before you begin, place a glass or metal bowl and the stirring blades of your (hand or stand) electric mixer in the freezer.
- Fill a PRO stainless steel smoking pipe with unsoaked smoking chips, preferably a sweet fruit or nut wood. Place the smoking pipe on the flame guard inserts over the flame you want to use. Ignite this flame to the lowest setting possible and preheat the grill to 95°C or lower so that the chips are just starting to smoke.
- Pour the cream into a flat, level bowl. Place this bowl in a larger container filled with ice to keep the cream cold. Disposable aluminum trays are ideal for this. Smoke the cream for up to 2 hours and taste regularly so that the cream is smoked exactly to your taste.
- Remove the cream from the grill when it is smoked to your liking and refrigerate while you candi the bacon.
- Preheat the grill to 200°C. Place the bacon on a baking sheet with a wire rack. Mix together the maple syrup and brown sugar and then brush both sides of the bacon slices with it. Cook the bacon on the grill over indirect heat until crispy. Remove from grill and allow to cool before crumbling. Set aside.
- To make the ice cream, take the mixing hook and bowl out of the freezer. Beat two cups of smoked cream with vanilla, rum (optional) and scraped vanilla beans until stiff peaks form. Fold in the can of sweet condensed milk and 2/3 of the crumbled candied bacon. Pour the cream mixture into a large shallow bowl. Add a few circles of caramel syrup and the remaining candied bacon. Freeze for at least 2 hours or until the ice cream is completely frozen.
- Serve the ice cream or make an incredible sundae with caramel popcorn, toasted marshmallows, whipped cream and more caramel syrup to celebrate National Sundae Day.
