Spit roast turkey with injected butter

If you want to roast a juicy turkey for the holidays, it's not as hard as you might think. With your grill and a rotisserie you can also prepare perfect poultry. Try this foolproof recipe – Spit Roast Turkey with Injected Butter – for a homemade butter turkey with injected butter and honey. The skin is crispy and the meat is tender. I made this recipe for the first time on Thanksgiving 2014. Since then, I've been able to use the techniques from this recipe to make some delicious turkeys, not just on Thanksgiving, but on many other holidays like Christmas and Easter, or just whenever I feel like it.



INGREDIENTS

  • 1 turkey, at least 4 kg.
  • 1/2 cup butter in pieces
  • 2 tbsp orange blossom honey
  • Salt, pepper and poultry seasoning to taste
  • Salt and freshly ground black pepper to taste
  • Salt to taste



Turkey saucee

  • 2 cups chicken or turkey broth
  • 2 cups vegetable water (the water used to steam/cook vegetables for dinner)
  • Flour for thickening



PREPARATION

  1. Remove the racks and place a drip tray underneath where you will skewer the turkey. Fill the drip tray with the 2 cups of chicken broth. Preheat the grill to 350°F using the rear burner only.
  2. Melt the butter and mix 1/4 cup with the orange blossom honey. Then use the marinade injector to inject the honey butter into all the large pieces of meat on the bird. Spray in different parts of the entire bird to moisten it optimally. If possible, pierce through the meat, but not through the skin. This way you avoid fluid loss and get a juicier result.
  3. Season the turkey completely with poultry seasoning, salt and pepper. The whole thing should stay simple. Tie the turkey together to prevent the wings and legs from opening. This allows the turkey to cook evenly on the rotisserie.
  4. Carefully insert the skewer rod into the bird and secure the forks into the turkey. Check that the rotisserie is properly balanced. Carefully lift the skewer stick with your palms. If the bird leans to one side, it is not balanced. Attach a counterweight to the other side.
  5. Place the skewer rod on the grill and place the right end in the motor. Switch this on and let the bird go.
  6. Check the turkey every 15 to 20 minutes and brush with the remaining butter. If the legs and wings get too dark, wrap them in foil until the bird is cooked through. The turkey has a cooking time of about 20 minutes per pound of meat.
  7. The turkey is done when the breast reaches an internal temperature of 145°F (65.5°C) and the dark meat on the leg is approximately 165°F (71°C). Then remove the bird from the grill, but cover with foil and wrap in towels for 15 to 20 minutes before carving and serving. This means the bird can reach the desired temperature everywhere without drying out. Meanwhile, prepare the vegetables and the perfect sauce.
  8. For the sauce, remove the fat drip tray from the grill and separate the turkey fat using a fat separator. Mix the fat with flour in a saucepan over medium heat and prepare a roux. If you don't have enough turkey fat, you can add butter, goose fat, or bacon fat to make more roux - which you can then use to make more gravy later. Then gradually add the separated liquid from the fat drip tray and the vegetable water. When the first shot of liquid hits the roux, it bubbles and becomes creamy. That's a good thing. Continue adding more liquid and stirring until the perfect sauce consistency is reached. Season with salt and pepper. You don't necessarily need all of the liquid for the sauce. If you have added too much liquid, simply let the sauce simmer until it thickens again.
  9. Serve the sliced ​​turkey and delicious gravy with other favorite foods at Christmas, Thanksgiving, or whenever you crave it.
