
Strawberry shortbread from the grill

This pastry is a men's dessert. Thoroughly male. At least that was my intention when I created this recipe for Grilled Strawberry Shortbread with Bourbon Whiskey Whipped Cream. I imagined men sitting in club chairs talking about the big cricket game, raising whiskey glasses to clink glasses and wearing monocles... hmm, I guess that was my imagination. Anyway, a juicy steak or ribs can be a great meal, but men like dessert too! So I started working on the recipe for these grilled strawberry butter biscuits. A strong and smoky taste and cooked on a grill, I could only have been right!
INGREDIENTS
- approx. 5 cups strawberries, halved (3 bowls)
- 1/3 cup brown sugar
- 1 lemon, grated
- 1/4 lemon, squeezed
- 2 tsp vanilla
- 1/2 shot of bourbon whiskey (optional)
- Pinch of salt
- 2 tbsp cornstarch
FRESH CHEESE COOKIES
3 cups wheat flour
2 tsp baking powder
1 1/2 pieces cold, salted butter, diced
3/4 cup milk 1/4 lemon, squeezed
1/4 Cup of honey
1 package (approx. 230 g) cream cheese, diced
Whipped cream with bourbon whiskey
1 1/2 cups whipped cream, ice cold
1 small shot of bourbon whiskey
2 tsp vanilla
PREPARATION
- Preheat grill to 190 °C and prepare for the indirect grill method. Place a glass or metal bowl in the freezer.
- Brush a cast iron skillet with coconut oil or butter.
- Wash strawberries, remove stems and leaves and cut in half. Quarter larger strawberries. Then stir in sugar, juice of 1/4 lemon, a dash of bourbon whiskey, vanilla, cornstarch, salt and half of the lemon peel. Set aside.
- Squeeze 1/4 lemon and add it to the milk. Let rest for a few minutes. In the meantime, prepare the dry ingredients for the dough.
- Using a sieve or flour sifter, combine the flour and baking powder. Then add the butter using a fork, pastry knife or your hands. Mix until the flour forms coarse lumps
- Stir honey into the milk mixture and then add to the flour. Stir with a spoon until a cohesive dough forms, then knead with your hands until a ball forms. Press the cream cheese into the dough with your hands. But don't knead the dough too much.
- On a floured surface, roll out the dough to a thickness of approx. 1 cm and then cut out circles with a round cookie cutter. Place the cut out dough circles on top of the strawberry mixture until all the dough is used up or the pan is full. If there is any dough left over, you can use it to bake additional pastries on a baking tray lined with baking paper.
- Bake the strawberry mixture with the pastry on the grill over indirect heat for about 45 minutes, or until the strawberry mixture has thickened and the butter pastry is brown on top. Bake the remaining pastry over indirect heat for 20-25 minutes.
- Prepare the bourbon whiskey whipped cream just before the strawberry shortbread is ready and can be removed from the grill. Remove bowl from freezer, add ice cold whipped cream, vanilla and bourbon whiskey. Beat with a hand mixer on medium speed until stiff peaks form - about 5 minutes. Refrigerate until the pastry is served.
- Serve hot with pastries, ice cream and whipped cream.
The grilled strawberry shortbread with bourbon whiskey whipped cream turned out simply delicious. The sweet strawberries taste just a hint of bourbon whiskey and the whipped cream has a subtle yet strong alcohol taste. The crowning conclusion to a successful day.
