
The best fried potatoes ever

Nothing goes better with a meal with the whole family than the best fried potatoes ever. They are crispy and fluffy at the same time. Imagine a perfectly seasoned caramelized crust cracking open to reveal the fluffiest, most perfect potato ever. We had to wait a bit before serving, and it was a test of patience not to sneak a few (i.e. all of them). Great-grandmother would be proud of us for this recipe. Your grandchildren will still make these potatoes!
INGREDIENTS
- 10 to 12 fist-sized potatoes (Russet or other variety)
- 2 tbsp butter
- 1 tbsp goose fat
- 1 tsp onion powder
- Salt to taste
- fresh, finely chopped chives
- fresh Parmesan
PREPARATION
- Preheat the grill to 200 °C. Prepare for cooking over indirect heat.
- Spray a baking tray with non-stick spray.
- Scrub and peel the potatoes. Cut into pieces of approximately the same size. Place in a pot of water and cook until almost cooked. This is very important! They have to be almost, but not quite, cooked. This prevents them from falling apart and ensures that they take on their loose consistency when grilled.
- When the potatoes are almost cooked - a little less than fork tender - drain and remove from the heat. Cover the pot and shake the potatoes a little so that they don't stick together. Don't shake too much. Otherwise you end up with mashed potatoes, especially if the potatoes are too cooked.
- Season with butter, goose fat, salt and onion powder. Mix everything carefully and make sure that each piece of potato is slightly covered with butter. Then place the pieces with the flat side down on the prepared baking tray.
- Bake over indirect heat for 30 minutes or until the potatoes are golden and crispy.
- Sprinkle with salt, freshly chopped chives and fresh Parmesan cheese before serving.
These are the best fried potatoes ever. They are another dish that would have belonged at gatherings presided over by Great-Grandmother. I finally succeed in this recipe and can make potatoes so delicious that she would be proud of me. What do you prepare for family gatherings?
