Watermelon Feta Skewers

Watermelon Feta Skewers are a quick-to-make appetizer that adds a gourmet touch to summer grilling. Chilling in the summer heat with friends and the local cider has never tasted better. I made these skewers with the idea of whetting our friends' appetites before the main course - and it worked brilliantly. I was surprised by the complex flavors and consistency. The watermelon lost its gritty structure, the feta became even creamier and took on a seductive smoky aroma. To serve, top the skewers with balsamic vinegar reduction and fresh basil.
INGREDIENTS
- 1 small watermelon, cut into 2.5 cm cubes
- 1 to 2 packs of feta cheese in brine, drained, cut into 2.5 cm cubes
- 1 handful of fresh basil
- 1/4 cup balsamic reduction
- 12 wooden skewers, 10 cm long, soaked
PREPARATION
- Dice watermelon and feta cheese. Meanwhile, soak the skewers.
- Very carefully place a watermelon cube on the skewer, then a feta cube and another watermelon cube. Feta is crumbly. Therefore cut and skewer carefully.
- Place the prepared skewers in the freezer for 15 minutes while you preheat the grill to 230°C.
- When the grill has reached the right temperature, remove the skewers from the freezer and pat dry with a kitchen towel. Never forget: Moisture is the enemy when frying.
- Place the skewers on the grill over direct heat. Grill for 1 to 2 minutes on each side or until grill marks form on the watermelon.
- Drizzle with balsamic vinegar reduction and sprinkle with fresh basil and serve immediately.
The flavor combination of watermelon and feta in these skewers simply has that special something. The intense aroma of basil and feta and the juicy, cool melon create a surprising contrast that you will want more of. Like chocolate with pretzels.
