
Wild game jerky

As a final instruction, I first wanted to write: "Now keep everything to yourself and don't tell anyone that you made this delicious treat." But that would be unfair to the people who have never tasted this amazing treat. Remember that beef jerky I wrote about? It was phenomenally good. This jerky makes a little less impression at first glance, but it has a strong taste that is quite sophisticated and addictive. I had promised that I would give half of it to the person who gave me the meat. But I can tell you, it was almost impossible to cut it in half and even harder not to just eat it all yourself. There was a lot of snacking that day.INGREDIENTS
- 1 roast game, at least 900 g
- 4 tbsp soy sauce
- 4 tbsp Worcestershire sauce
- 2 tbsp brown sugar
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- 1/4 tsp Bone Dust barbecue seasoning and rub
- Sriracha to taste
- Salt and pepper, freshly ground
PREPARATION
- Thaw wild or, conversely, freeze to almost freezing point, but not quite; the meat must be stiff but still malleable. Carefully cut into strips approx. 3 mm thick. Don't worry if you have a few strips left over: you can use them for sweet peppers stuffed with game.
- In a bowl, stir together soy and Worcestershire sauces, brown sugar, garlic, bone meal, Sriracha sauce, salt and pepper.
- Place the game in the marinade in a large freezer bag with a zip closure or in an insensitive bowl. If using a freezer bag, make sure all strips of meat are covered in marinade and squeeze out as much air as possible. Refrigerate until needed.
- Prepare the smoker when the game has been marinated for at least 24 hours. It must have a temperature of approx. 90 °C.
- As soon as the smoker has reached the required temperature, place the game on the top rack, as far away from the heat source as possible. Add your favorite smoking chips to the charcoal and smoke the venison strips for 10 to 15 minutes.
- Turn the game halfway through the smoking time and smoke for another 5 to 15 minutes or until it has become dry and stiff.
We have some great friends! Some give us meat like this game, others are incredibly creative; They took the pictures of this BBQ adventure week and are also letting us smoke it at their house... and by smoking I mean MEAT. This weekend was fantastic. We used the Apollo® to make some really tasty things. One of them was game jerky that we had been given as a gift. I marinated it for 24 hours after cutting it up and then smoked it for just under 30 minutes to get something that's ridiculously addictive.
